A quick 5 point lunch (7 Weight Watchers PointsPlus) consisting of a Veggie Chicken Sandwich (Morningstar Farms Chik’n Patty, a toasted whole wheat 110 calorie pita, 1 lite swiss laughing cow cheese wedge, spicy mustard, baby spinach, and tomato slices) plus some fresh strawberries and a sliced mini baby cucumber. Filling and yummy!

I didn’t like the Chik’n patties when I first tried them, but I started preparing them this way: Microwave for 1:30 seconds, then toasting it in the toaster.  This way it is thoroughly cooked, crispy on the outside, and ready from the freezer in less than 3 minutes! Can’t beat that.
