Hey ladies… I said hey ladies… how do 1 point french fries sound?  Holla!

Cast out the potatoes and substitute something better!

  • butternut squash (use the long ‘stem’ portion, reserving the bulb for another use later)
  • non-stick cooking spray
  • 1 t olive oil
  • Seasonings of choice- I used salt, pepper, and garlic powder
  1. Peel the squash, cut pieces into “fry” like shapes
  2. Place fries, oil, and seasonings in a ziploc bag.
  3. Shake it like a polaroid picture.
  4. Bake in a 400 degree preheated oven for 15-20 minutes, until tender and browning on edges. You can flip them halfway through to brown both sides, but it’s not necessary if you’re lazy like me.

Makes 2 servings.  Per serving- 1 point value (1 WW PointsPlus; if you are counting veggies free, 1 WW PointsPlus for the entire recipe!)

The oil is completely optional. I only add it to have the ‘healthy oil’ addition.  Non-stick cooking spray works fine without the oil and they will still brown and be tasty. I just like the addition of the oil.  Without oil, the entire recipe is 1 WW point (0 WW PointsPlus!)
